Starting on the famous island of Islay, once a Viking stronghold, now a whisky making paradise, you will be thrust into a world of fine tasting and pairing as we partner you up with the islands leading whisky guide and author of serveral whisky/food books. We have arranged special tastings, visits and a unique lunch where you will learn more about the complexities of pairing whisky with foods. Today will include the likes of Ardbeg, Laphroaig, Ardnahoe and the brilliant Kilchoman on the windswept north west Machair Bay.
On finishing your Islay experience it'll be a short hop to Scotland's longest continually inhabited castle, Duntrune - home to the 19th Laird of Poltalloch and Chief of Clan Malcolm. You will be warmly welcomed by the family and will enjoy a dinner hosted by the chief's son. Dining on local produce, caught or hunted from the hills around the estate the food is fantastic! This is Highland hospitality at it's best and truly an off-market experience reserved only for the few.
Having had an incredible evening with one of Scotland's oldest families, the following morning your helicopter will depart heading to the stunning Isle of Mull. Here we have arranged for another off-market experience. You will be heading out today with a local legend, former writer, turned adventurer and ethical fisherman, Guy Grieve will be inviting you aboard one of his boats - you will embark on a Scallop diving safari. Guy dives himself, collecting incredible Scottish scallops from the seabed before preparing these delicious treats infront of you on a grill. If the weather is great, you could be in for a beach BBQ! Eitherway, a day with Guy on the water is a real Scottish experience to savour allowing you to fully connect with another of Scotland's famous industries. Guy is quite a character, having lived a year alone in the Alaskan wilderness, sailed the Atlantic Ocean and written many books! Guy now runs his own food company, called The Ethical Shelfish Co. - supplying some of the UK's top restaurants with hand-foraged and dived scallops, crabs and lobsters. This evening you will be staying in a castle hotel, Isle of Eriska near Oban. The Isle of Eriska is a Relais & Chateaux property, renowned for it's first class cuisine. On arrival at Oban Airport, your Range Rover transfers will be awaiting to take you the short distance to the hotel.
Moving on from Oban Airport, your next port of call is the Isle of Skye, here we have arranged for you to visit Talisker Whisky Distillery - before being transfered by x2 Range Rovers to one of Scotland's most respected restaurants - The Three Chimneys - where we have booked a table for you. From here you will be flown to your your own private lodge on a 23,000 acre Highland reserve. Alladale Wilderness Reserve is situated in one of the most remote parts of the UK, in the heart of Sutherland. Here the estate or wilderness reserve as it prefers to be known, has embarked on an ambitious and impressive 'rewilding' scheme - planting over 1-million native tree species in a bid to help re-establish the native Caledonian Pine Forest in this area. Red Squirrels have been successfully translocated to the estate, and one of Scotland's most important Scottish Wildcat Breeding Programmes is on site. Visit the cats, see the squirrels and enjoy an amazing stories from head Ranger Innis before relaxing in your Highland lodge.
The following day we have arrange for you to visit the Orkney Islands. Here you will drop into Highland Park distillery for an exceptional tour. On your way south a pit-stop in Speyside has been scheduled. Here you wlll be able to visit the newly opened Macallan Visitos Centre and your drivers will be awaiting at the landing site. This evening is your last at Alladale and in Scotland, and we have arranged for you a special evening with one of the leading figures in the Whisky world. Charles Maclean - once Master of the Quaich and leading authority on Scotch whisky will accompany for an evening tasting and appreciating some of Scotland's best malts. The following morning we have arranged for you at Alladale, a late check-out allowing you time soaking up this special Highland setting far away from the rest of the world. We encourage you to take a short walk from the lodge to the newly set up Aquaponics site on the reserve close the main house. Here the lodge is growing all it's own veg in an impressive and futuristic, self-sufficient food production system. If you haven't yet had the time, visit the Scottish Wildcat enclosure.
